This all-natural, hand-made cheese of the Emmental type is made from raw cow milk. The flavor of this farm stead cheese is intensely Swiss with just a hint of acidity, nuts and butter, but beautifully balanced. The texture is smooth and slightly soft with numerous small holes. The firm natural rind is produced by aging exclusively in our cave. In addition, we age the 12 lb. wheels, continually turning and rinsing them in salt water. Der Vauden Swiss Cheese is named for a town in Switzerland, Vaud, from which our ancestors emigrated, and from which we got our original Swiss cheese recipe.
The milk for this cheese is produced on the Esh family farm located in the Nittany Valley of central Pennsylvania. The Eshes are proud of their farmstead and the care that they give to each individual animal. A large emphasis is put on cow comfort and providing a natural environment for their animals.
Pairing: This cheese pairs well with all sorts of jams and preserves, I specifically love it with Brimstone Bakery's Strwaberry Balsamic Jam or the Girl Meets Dirt Quince Preserve. It pairs well with fruity white wines and medium to full bodied fruity reds.
