Havilah is Cherry Grove Farm's take on an alpine-style cheese that is only made with peak pasture milk, raw milk and aged 9-15 months. This fully captures the terroir of our Central Jersey farmstead and reflects what the cows grazed upon. "This cheese is my favorite of ours to make and eat. It doesn't hit you over the head, but instead unfolds with layers of aroma and flavors," said Head Cheesemaker, Paul Lawler.
Havilah Reserve takes taste to the top-tier, accentuating sweet notes and adding a pop of crunch to that texture at 16-24 months of age.
On the cheeseboard Havilah pairs with savory marmalade or dark chocolate like our Sol Cacao Madagaskar.
